Peanut Butter Energy Balls

For some reason, meals and treats people bring by after you have a baby seem to stick in my memory forever as the yummiest thing I’ve ever eaten. Partly because I didn’t have to cook it. Partly because I feel so nostalgic about having a new baby and everything associated with it (including food) seems extra good. But most times, it’s because the food is really, really good 🙂

A dear friend brought these peanut butter balls over after my fourth baby was born. Oh my. They hit the spot! I would grab two (or three or four) every time I sat down to nurse. That peanut butter coupled with oatmeal and honey and chocolate–delicious. So perfect for a ravenous nursing mama.

Nowadays I don’t eat these little delights often because they are a huge crossover in Trim Healthy Mama world (read more about THM here). But my kids and husband adore them and they are the easiest thing to whip together. My six year old can basically make them alone. Tuesday afternoons are tea time at our house and I always try to make a special treat for the occasion. You can bet these peanut butter balls are on the menu almost every single week. And no one is complaining about that!

You can enjoy these peanut butter energy balls as a quick breakfast, a dessert after lunch, or an afternoon snack. Ours never last long, but if you have some leftover they freeze great, too!

Peanut Butter Energy Balls

Delicious protein-filled snack!
Prep Time 15 minutes
Servings 12 Balls

Ingredients
  

  • 1 Cup Rolled Oats
  • 1/2 Cup Flax Meal or Almond Flour
  • 1/2 Cup Peanut Butter
  • 1/3 Cup Honey
  • 1/2 Cup Chocolate Chips
  • Dash Salt
  • 1 tsp Vanilla

Instructions
 

  • Mix all the ingredients together and form into balls. I like to use a two tablespoon measuring spoon and then roll them into balls with my hands.
